Vinification
After a brief maceration, the grapes undergo soft and progressive pressing followed by alcoholic fermentation in stainless steel.

Aging
Aging in stainless steel on the lees with periodic bâtonnage at low temperatures, to maintain freshness and impart structure and balance. Bottling is done gradually, in small batches.
