After 25/30 days of traditional maceration over the skins in small temperature regulated fermentation vatswith daily pressing, the wine is allowed to rest for 24/30 months in our own cellar.

Total acidity: 5,30 g/l
Colour: violet-red tending to orange.
Bouquet: a full bouquet with hints of chocolate, vanilla and black fruit.
Palate: a fruity palate, well stated and harmonious with a persistent ﬁnish. Rich in velvety and well structured tannins.
Best served with meat based pasta dishes and ripe cheeses. Red meat in general including lamb, kid and all wildfowl, especially partridge and pheasant.
