A sweet Walnut Liqueur, Nocino (29% ABV) is made by infusing fresh GREEN walnuts that are still in their youngest stages of development. Not yet solidified, the familiar nut is still a liquid within a soft white shell surrounded by a protective husk. Soft enough to cut in half, each walnut is split open to expose it to the NGS.
Once placed in the alcohol, the walnuts immediately begin to age. Considering the maceration stage of all products, Nocino takes the longest to infuse, resting for 6-8 months with an occasional stir to evenly expose each piece. 3- 4 months into maceration, small amounts of cinnamon and clove are added to provide depth of flavor and recognizable 'holiday' flavors.
Traditionally produced as a holiday liqueur, the cinnamon and clove stimulate the palate in a way that enhances the soft, buttery sensation obtained from the young walnuts.
A perfect compliment to most whiskeys, Nocino acts great as a sweetener for Old Fashioneds, Manhattans, Amaretto Sours and cocktails with Walnut Bitters.
